8-can Taco Soup recipe

KNOXVILLE, Tenn. (WVLT) - This may be one of the easiest soup recipes ever! This is one of my favorites to make when we're camping, or it's perfect for tailgating. It only takes 8-cans and one packet of seasoning, and there's nothing to keep cold if you're taking the ingredients on-the-go.

What you need:
- 2 cans of beans of your choice (i chose black beans and kidney beans)
- 1 can diced tomatoes
- 1 can Rotel (hot or mild, your choice)
- 1 can of corn
- 1 can cream of chicken soup
- 1 can chicken broth
- 1 12.5 oz can white chicken breast (can substitute ground beef or fresh chicken, but then you'll have to do some more prep work to cook these.)

The simplicity of this recipe is that all you need is a pot to cook it in, or even put it in a slow cooker.

Add your cream of chicken soup, the amount of water it calls for, and your chicken broth to your pot. Drain and rinse all of your other canned ingredients. (If you're camping, then at least drain the other cans so you don't end up with too much broth base.)

Then, add all of your ingredients, including your packet of seasoning, and heat it up! Allowing to simmer longer provides the best flavor, so a slow and steady cooking is ideal but this can be easily sped up if you're in a hurry.

Serve with some tortilla chips, shredded cheese and sour cream if you can. Any of your favorite taco toppings go well with this soup!
