KNOXVILLE, Tenn. (WVLT)- Most of us know salmon is good for us, but how many of us actually like eating it?
If you do, you're in good shape! If not, this is a recipe even non-salmon eaters can enjoy.
Salmon burgers. Simple and takes half the time to cook.
What you need:
1 pound salmon filets
1 poblano pepper chopped
2 green onions chopped
1 TBSP olive oil
1/2 cup panko bread crumbs
Salt and pepper to taste
In a bowl combine salmon, 1/2 poblano pepper, green onion, egg, panko, salt and pepper and lemon. Mix together. If you're willing to get dirty, your hands will do the trick.
Heat olive oil on medium skillet
Cook patties on both sides about 2-5 minutes until cooked.
You may want to do this before, so your patties don't get cold.
In a food processor combine avocado and 1/2 poblano pepper and juice from half a lemon until chunky.
For a carb free version eat on a bed of lettuce with avocado salsa on top or place on a bun.
