Fresh Fruit Parfait Wednesday, July 2, 2014


1 1/2 cups low fat milk
1 4-serving-size package fat-free sugar-free reduced-calorie vanilla instant pudding mix
1/4 cup Greek cream cheese spread (or regular fat-free cream cheese spread)
2 tablespoon honey
2 tablespoons orange juice
2 cups each, halved strawberries and whole blueberries


Mix milk and pudding mix. Beat until it starts to thicken. Cream cream cheese with honey and orange juice and blend into pudding. Chill. Place ¼ of the strawberries in the bottom of 4 parfait glasses. Add ¼ of the pudding mix over strawberries. Top each glass with ¼ of the blueberries. Top with a dollop of topping. Chill before serving.
