Penne Pasta ala Vodka Friday, April 4, 2014


1 pound penne
3-4 cloves garlic, minced
1 onion, finely chopped
3 TBSP butter, divided
2 TBSP olive oil
1 cup vodka
1 can (14 oz) tomato sauce
1 cup cream
1/2 tsp red pepper flakes
1/2 tsp salt
black pepper
1/2 cup grated Parmesan


In a large pot of salted water, cook the penne according to package directions.
In a large saucepan over medium heat, saute the garlic and onions in 2 TBSPs of the butter and the olive oil. Remove the pan from the heat, add the vodka, cook for about 3 minutes and add the tomato sauce.
Stir in cream, then turn heat down to the lowest possible simmer, add red pepper, salt and black pepper to taste. Add remaining butter and the drained pasta and toss to combine. Sprinkle on Parmesan, taste and adjust for salt and red and black pepper.
