4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
2 tsp vanilla
1 tsp baking soda
Pinch of salt
3 cups all-purpose flour


Preheat oven to 350 deg. You can do this in a bowl with just a wooden spoon, but I like throwing my ingredients in my stand mixer in order. The bananas cream together with the butter, and as long as you don’t over mix after you add the flour, it’s all good. Add ingredients in order in the bowl of a stand mixer, and mix! Pour batter into a buttered 4×8 loaf pan. Bake at 350 degrees for 1 hour, rotating the loaf pan after 10 minutes. A skewer inserted into the center of the loaf should come out clean. Allow bread to rest in the pan for about 10 minutes, then turn onto a wire rack to cool completely before slicing.
