Chinese Orange Chicken Monday, April 7, 2014


4 lbs chicken chunks
2 TBSP vegetable oil
12 oz orange sauce*
12 oz onions, chopped


Deep fry chicken chunks in a fryer at 350 deg for 8 to 10 minutes. Remove chicken from oil and allow to drain. Heat oil in a large pan. Add onions and stir until they are tender crisp. Add chicken and orange sauce and toss until all chicken in coated with the sauce. Serve with white rice.

*Orange Sauce:
1.5 cups water
2 T. orange juice
1/4 cup lemon juice
1/3 cup rice vinegar
2.5 T. soy sauce
1 T. grated orange zest
1 cup packed brown sugar
1/2 teaspoon minced fresh ginger root
1/2 teaspoon minced garlic
2 T. chopped green onion
1/4 teaspoon red pepper flakes

For orange sauce, mix all ingredients and simmer until thickened.
