Christmas Cookies with White Chocolate Mint Kisses Monday December 16, 2013
Italian Cookies with Mint
1/2 cup butter, softened
1/2 cup white sugar
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
2 tsp baking soda
About 25 White Chocolate kisses, unwrapped
Chocolate Mint cookies
1 1/2 cups semi sweet chocolate chips, divided
1 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted better, softened at room temperature
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla
1 large egg
24 white chocolate peppermint Hershey’s kisses, unwrapped
Italian Cookies directions:
Preheat oven to 350 deg. Grease cookie sheets. In a large bowl, cream together the butter and sugar until smooth. Mix in the egg and vanilla. Combine the flour, soda and baking powder; stir into the creamed mixture until blended. Divide dough into walnut sized portions. Place on cookie sheet and press down lightly.
Place cookies 2 inches apart on the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven, until firm and golden at the edges. Remove from the oven and immediately press a mint kiss into the cookie. Allow to cool on a rack and be sure that the chocolate is firm again before storing in a tight container.
Note: these cookies were traditionally made by making the piece of dough into a rope and then forming a loop with it. The cookie is then baked as above and if you wish is tossed with confectioners sugar.
Chocolate Cookies Directions
Preheat oven to 350 deg. Microwave 3/4 cup of the semi sweet chocolate chips approximately 1 minute until they are melted. Combine flour, baking soda and salt in a small bowl, set aside. Beat butter, brown sugar, granulated sugar and vanilla in a mixing bowl until creamy. Beat in melted chocolate and egg. Gradually add the flour mixture and beat until creamy. Stir in remaining 3/4 cup of chocolate morsels. Scoop out about 1 ½ to 2 TBSP of dough and roll loosely into a ball. Place on a lightly greased cookie sheet allowing at least three inches between cookies. They spread a lot. Bake 10 minutes. Remove from oven and let cool for just a minute. Press a kiss into each cookie. Cool cookies completely on a wire rack.
