Handy Bran Muffins Monday, February 3, 2014


1 cup each, all-bran cereal and hot water
1 ¼ cups sugar
¾ cup cooking oil
2 eggs
2 cups buttermilk
2 ½ cups all purpose flour
2 ½ tsp baking soda
1 tsp salt
2 cups raisin bran cereal


Pour hot water over the all-bran and allow to stand. In a large bowl, mix sugar, oil, eggs, and buttermilk. Mix together all dry ingredients. Stir dry ingredients and all-bran mixture into milk mixture. Add raisin bran and stir to mix. Fill muffin cups 2/3 full and bake in a 375 deg oven about 20 minutes or until brown.

This is an old recipe that several of you have asked about. This mixture will keep in the refrigerator as much as 2 weeks and is ready to bake when you want it. Just give it a stir and fill muffin cups and bake. That’s what makes it handy.
