Superfood salad with raspberry vinaigrette Thursday, March 27, 2014


1 small head of Romaine, sliced
1/2 pounds mixed dark baby greens, such as a Spring Mix
3 TBSP dried cranberries
2 TBSP sliced almonds
2 TBSP red onion, minced
2 TBSP each shredded carrot and purple cabbage

1 1/2 cups raspberry all fruit jam
3 TBSP balsamic vinegar
salt and pepper to taste


Toss the romaine and mixed greens in a large bowl. Sprinkle the carrots, cabbage, and red onion evenly over the top.
In a small bowl, or with a blender, combine the raspberry jam and balsamic vinegar. Whisk very well to combine. Drizzle the dressing over the top of the greens and vegetables. Sprinkle the cranberries and almonds over the top, and serve immediately.
