Roasted Baby Carrots Thursday, May 1, 2014

Ingredients

1 pound baby carrots
1/4 cup honey
salt and pepper to taste
1/3 cup olive oil

Directions

Preheat oven to 350 deg. In a medium bowl, combine olive oil and honey with salt and pepper. It won't mix well - don't worry about it to much. Add carrots, and toss until the carrots are well coated with oil and honey. Place carrots on a baking sheet.
Bake for about 30-45 minutes. Very small carrots won't take long at all - so I actually test at about 20 minutes, to make sure they aren't getting more done than we like.
