Chocolate Chip Cookies Thursday, October 3, 2013


2 sticks butter (1 cup), room temperature
1 cup white sugar
1 cup brown sugar, packed
2 eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1 teaspoon kosher salt
2 cups chocolate chips, semisweet


Preheat oven to 350 deg. In the bowl of an electric mixer, beat together butter and both sugars until fluffy. Add eggs, one at a time. Stir in vanilla. In a separate bowl, mix baking soda and hot water. Add salt and stir. Add to butter/sugar mixture. Stir in flour, scraping down sides of the bowl as you work. Stir in chocolate chips. Drop by the tablespoon (or use a dipper – it’s easier) onto ungreased baking sheets. Bake about 10 minutes for softer cookies, or 12 for crispier cookies (check your own oven to see how you like it best!).
