A South African recipe

2 yellow onions, peeled and cut up
2 potatoes, cooked and diced small
4 TBSP Corriander
2 tsp turmeric
4 TBSP vegetable oil
4 TBSP garlic, minced
1 TBSP ginger, minced
20 oz fire roasted tomatoes
4 lbs rough cut chicken
8 oz frozen peas
2 TBSP salt
1 TBSP pepper
4 cups water


combine onion, garlic, oil and all other dry spices in a food processor to make a puree. Saute puree until it starts to simmer. Add all other ingredients and bring to a boil. When hot through it is ready to serve.

A note of interest. This was a recipe designed to be made with rabbit. The folks at Dollywood decided to do it with chicken.
