Bruschetta and Costini Wednesday, July 9, 2014


1/2 loaf French bread, sliced into 1/2 inch slices
2 large cloves garlic, halved
Extra-virgin olive oil, for drizzling
3 small Roma tomatoes, halved and seeded
1/2 cup fresh basil leaves
kosher salt


Preheat broiler. Broil bread slices until toasty and the edges very slightly charred.
Rub each side of the toast with the halved garlic and drizzle with olive oil.
Chop the tomatoes and place in a small bowl. Slice the basil very thinly, and add to tomatoes. Drizzle a little olive oil over tomatoes and basil, and toss to combine. Season with kosher salt to taste, and serve over the toasts.
