Purnell's Sausage Chili Wednesday, March 5, 2014


1 lb. Purnell’s “Old Folks” Whole Hog Sausage
1 lb. can of red kidney beans
1 medium yellow onion chopped
1/2 cup water
1/4 tsp. garlic powder
1 lb. can of tomatoes
1 tsp salt
8 oz. tomato sauce
2-3 tbsp chili powder
1 tsp ground cumin
1 tsp oregano
Cayenne pepper is optional


Crumble and fry sausage and onion together until sausage is lightly cooked. Add beans. Crush tomatoes and add with their juice; combine all other ingredients and add to pot. Simmer, uncovered, for an hour or more. Serves 4. Simply double or triple the recipe for a larger number of guests.
