Microwave Fish Creole Thursday, January 20, 2011


1 lb tilapia filets
1 8 oz can tomato sauce
1 4 oz can sliced mushrooms, drained
1/2 green bell pepper, diced
1 stalk celery, sliced
3 TBSP water
1 1/2 TBSP instant minced onion
salt and black pepper to taste


Arrange fish in a 9x13 inch microwave safe dish. Stir together remaining ingredients and pour evenly over fish. Cover tightly with plastic wrap, turning back one corner to vent. Microwave at high power for 8 to 10 minutes, rotating dish after about 4 minutes, until fish flakes easily with a fork. Let stand about 5 minutes before serving to blend flavors.
