Dollywood’s Grilled Grouper Friday, December 21, 2007
7 oz grouper fillet (one for each diner)
1 fresh lemon
Sprinkle 1/8 oz Cajun seasoning on each grouper fillet. Place on grill and squeeze half a lemon on each fillet. Cook until brown, turn once and brown other side. Fish should flake easily.
There are a number of good Cajun seasoning mixes out there. Use the one you like best. I like Tony Cachere’s and Paul Prudhomme’s Fish Magic.
