4 to 6 pork chops
2 TBSP cooking oil
1 29 oz can cut sweet potatoes
salt and pepper
½ cup syrup from sweet potatoes
1 cup Brother Jack’s Gourmet Sauce
In a heavy skillet with a good lid heat the oil medium hot. Rub both sides of pork chops with salt and pepper. Brown pork chops on both sides (in batches if necessary). Drain potatoes reserving ½ cup syrup. Return pork chops to skillet and cut potatoes into chunks over the pork. Mix potato syrup with Brother Jack’s sauce and pour overall. Cover and allow to cook about 10 minutes. Remove cover and increase heat and cook until sauce has coated both meat and potatoes and has cooked down thick.
