Black Bean Soup with Turkey Sausage Tuesday, October 11 2011


3 cans black beans, drained
1 lb turkey smoked sausage
1 TBSP cooking oil
1 medium onion, chopped fine
2 carrots, peeled and chopped fine
4 cups chicken stock
2 TBSP chili powder
1 tsp hot sauce (or to taste)
salt and pepper to taste


Heat oil in a large soup pot. Saute onions and carrots until tender. Sut the sausage in half lengthwise and then slice into ¼ inch slices. Stir sausage into onions and cook a couple of minutes. Stir in beans, stock, chili powder and Tabasco. Stir to mix and bring back to a boil. Reduce heat to a simmer and allow to cook about 30 minutes to combine flavors. Add salt and pepper to taste.
