Peanut Butter and Jelly Bars Friday, November 11, 2011


Based on a Martha Stewart recipe

1 cup (2 sticks) butter, softened
3 cups all-purpose flour
1 1/2 cups sugar
2 eggs
2 1/2 cups smooth peanut butter
1 1/2 teaspoons salt
1 tsp baking powder
1 tsp pure vanilla extract
1 1/2 cups strawberry jam (or your favorite flavor with peanut butter)
2/3 cup dry roasted salted peanuts, roughly chopped


Preheat oven to 350 deg Spray a 9x13 inch pan with baking spray. Line with parchment paper. Turn the parchment paper and spray again, lightly. Place butter and sugar in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium-high speed until fluffy, about 2 minutes. On medium speed, add eggs and peanut butter; beat until combined, about 2 minutes. Whisk together salt, baking powder, and flour. Add to bowl of mixer on low speed just until combined. Add vanilla. Transfer two-thirds of mixture to prepared pan; spread evenly pressing down. Spread jam evenly on top of peanut-butter mixture. Spread remaining third of peanut-butter mixture lightly on top of jam. Sprinkle with peanuts. Bake until lightly brown (about 45 minutes). Transfer to a wire rack to cool; cut into small squares.
