Pasta Sauce with Turkey Leftovers Friday, November 25, 2011

Ingredients

2 medium onions, chopped
2 garlic cloves, minced
1 1/2 cups diced celery
1 TBSP cooking oil
3-4 cups chopped cooked turkey
1 6 oz can tomato paste
2 14.5 oz cans diced tomatoes, drained
1 cup beef stock
3 TBSP dried parsley
1 TBSP Worcestershire sauce
1 tsp salt
1 tsp brown sugar
1/2 tsp pepper
1 bay leaf

Directions

Saute onion, celery, and garlic in cooking oil until onion is translucent. Stir in all remaining ingredients and bring to a boil. Reduce to simmer and allow to cook about 10 minutes to blend flavors. Serve over noodles, spaghetti or your favorite pasta. It is also good over rice.
