1 brownie mix 9x13 inch pan size (I used Food Club Fudgy mix)
1 14.5 oz can black beans
Open black beans and drain. Leaving them in the can, rinse and drain again. Refill the can with water. Pour into a blender, food processor or just a bowl. Mash or puree as fine as you wish. If you leave hunks of bean, they will be nut like in the finished browies. In a large bowl, mix the bean puree with the brownie mix and turn into a 9x13 inch pan which has been sprayed with baking spray. Bake according to pkg directions (about 24 to 26 minutes). Allow to cool before cutting into squares.
I met Carey at the Healthy Living Expo and she set me on the trail to this good treat. I have tried this with a sugar free brownie mix which bakes in an 8x8 or 9x9 inch pan. I mixed it exactly as I described above. I discovered that these have a better texture if you cut into squares, put into a tightly covered dish and chill in the refrigerator overnight.
