Ingredients
2½ cups buttermilk pancake mix
⅔ cup Water
½ cup sugar
¼ cup vegetable oil
1 egg
½ tsp grated nutmeg
4 TBSP butter
½ cup sugar
2 tsp ground cinnamon
Directions
Preheat oven to 400 degrees. In a medium bowl, stir together pancake mix, water, sugar, vegetable oil, egg and nutmeg until just blended. Spoon batter into a lightly greased, or paper lined, 12 cup muffin pan, filling 2/3 full. Bake for 12-14 minutes, or until a toothpick inserted in center comes out clean. To prepare the topping, melt butter and set aside. In a small bowl, stir together sugar and cinnamon. While muffins are still warm from the oven, dip into melted butter and then into the cinnamon sugar mixture.
