Roast Chicken Salad Tuesday, February 28, 2012

Ingredients

2 1/2 cups diced rotisserie roasted chicken breast meat
2/3 cup diced celery
2/3 cup diced apple (Granny Smith works well)
1/4 cup slivered almonds, toasted
1/2 cup mayonnaise (reduced or fat free works fine)
1/2 tsp salt
1/4 tsp black pepper

Directions

Combine store-bought rotisserie-roasted chicken, celery, apples, almonds and mayonnaise in bowl; mix well. Season with the salt and pepper and mix to blend.
Chill.

This chicken salad can become a meal if spread on a good whole grain bread and topped with some good salad greens.
