Black Bean Salsa Friday, May 18, 2012


A recipe inspired by the good healthy food at MOOYA on Kingston Pike

1 15 oz can black beans, drained, rinsed and drained again
1 cup whole kernel corn (fresh or frozen)
½ small red onion, chopped
1 small tomato, seeded and chopped
½ small red bell pepper, chopped
5 or 6 pickled jalapeno pepper rings, chopped
¼ cup fresh cilantro, chopped
2 TBSP extra virgin olive oil
2 TBSP lemon juice
salt and pepper to taste


Mix all ingredients and cover and chill before serving.
