More Than Your Mama’s Potato Salad Monday, May 28, 2012

Ingredients

1 lb red potatoes, cubed
1 lb sweet potatoes, peeled and cubed
2 hard-cooked eggs, coarsely chopped
1 small onion, chopped fine
1 celery rib, chopped fine
¼ cup reduced –fat or fat free mayonnaise
¼ cup reduced- fat plain yogurt
2 TBSP cider vinegar
2 TBSP olive oil
1 TBSP reduced sodium soy sauce
½ tsp ground mustard
salt to taste

Directions

Place both potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat, cover and simmer for about 15 minutes or just until tender. Drain and allow to cool. Place potatoes in a large bowl. Add eggs, onion and celery. In a small bowl, combine all remaining ingredients. Pour over potato mixture and toss to coat. Cover and refrigerate at least a couple of hours.
