Chicken Salad Sandwich Wraps Thursday, May 31, 2012

Ingredients

4 cups roasted chicken, cut into cubes or shredded
1 cup Greek yogurt
1/2 cup mayo
2 tablespoons Dijon mustard
3/4 cup glazed walnuts, chopped
1/2 cup dried cranberries, chopped
2 celery ribs, diced
1 red onion, minced
1 lemon, zested and juiced
One 8-ounce can water chestnuts, drained and chopped
Salt and freshly cracked black pepper

Sandwich Build:

Four 12-inch whole wheat tortillas
Red romaine lettuce
Tomato slices

Directions

1. In a large bowl, mix together chicken, yogurt, mayonnaise, mustard, walnuts, cranberries, celery, onion, lemon zest and juice, and water chestnuts. Taste, and adjust for salt and pepper. I find this loves a good bit of freshly cracked black pepper.

2. To make the wraps, lay red romaine lettuce leaves on a tortilla. Spoon the chicken salad on top, then top with tomato slices. Fold over bottom, and roll up the wrap. If necessary when building them ahead, secure with a toothpick
