Black Walnut Corn Muffins Tuesday, June 19, 2012

Ingredients

½ cup coursley chopped black walnuts
2 cups self-rising cornmeal mix
½ tsp baking soda
2 eggs, beaten
½ cup corn oil
1 ½ cups buttermilk

Directions

Spray 12 muffin cups with baking spray. Distribute black walnuts evenly among the cups. Mix eggs, oil and buttermilk and stir into the dry ingredients. Fill cups about 2/3 full. Bake in a preheated 350 deg oven about 15 to 18 minutes or until brown. These are good hot, warm, or cold.
