Avocado Yogurt Dip with Vegetables Monday, July 16, 2012


½ cup plain fat-free Greek yogurt
2 ripe avocados, peeled and seeded
1 clove garlic, minced
3 TBSP chopped fresh cilantro
1 TBSP finely chopped seeded jalapeno pepper
2 TBSP fresh lime juice
¼ tsp ground cumin
salt and pepper to taste
cut up veggies for serving (pita chips are also good with this dip)


Place yogurt, avocados, garlic, cilantro, jalapeno, line juice and cumin in a food processor. Mix until smooth. Season with salt and pepper to taste. Scrape dip into a serving bowl and serve with cut up veggies (or even pita chips).
