Ingredients
A Grainger County Tomato Festival recipe
5 to 6 medium tomatoes, peeled and quartered
1/3 cup sugar
1 tsp salt
1/8 tsp pepper
½ stick butter
1 ½ rolls Ritz crackers
Directions
Cook tomatoes on medium heat, stirring frequently. When fully cooked, add sugar, salt and pepper. Pour ½ of cooked tomatoes into an 8 1/2x11” casserole dish. Cover with Ritz crackers and dot with ½ of the butter. Pour remaining tomatoes over cracker layer. Layer top with crackers and dot with remaining butter. Bake for 30 minutes in a 350 deg oven. This dish is good hot or cold.
