2 cups cornmeal
1 cup buttermilk
1 egg
2/3 cup sugar
1/3 cup oil
3 TBSP salsa
2 slices Queso cheese


In a large bowl, mix the cornmeal, buttermilk, egg and sugar. Stir until smooth. Heat a skillet over medium high heat and pour a thin layer of oil. Once heated, pour about half a cup of cornbread mix on each side of the skillet. Saute the patties until lightly brown and form a crust on one side (about 2 or 3 minutes). Flip the patties. Top one pattie with your favorite salsa. Put two slices of cheese on other pattie. Flip the cheese pattie onto the salsa pattie. Flip the two of them and cook about an addition 2 minutes. Top with a TBSP salsa and serve.
