Macaroni and Cheese with Snow Peas and Fresh Tomatoes Friday, May 23, 2008


2 cups elbow macaroni
1 cup snow peas, strings removed and sliced crosswise
2 TBSP butter
1/4 cup milk
1/4 lb Velveeta Cheese
1 cup cheddar cheese, grated
1 tomato, chopped
2 green onions, sliced crosswise


Cook macaroni according to pkg directions add snow peas to boiling water in the last two minutes. Drain and return to pan. Stir in butter, milk and cheeses and stir until cheese is dissolved. Stir in tomato and green onions and serve.
