Easy Strawberry Shortcake Friday, May 30, 2008


3 to 4 cups sliced strawberries
1/2 cup sugar plus 2 TBSP, Divided
1 cup plain flour
1/2 tsp baking soda
pinch of salt
1/4 cup cold butter
1/3 cup milk
1/4 cup sour cream
whipped cream


Combine strawberries and 1/4 cup sugar and refrigerate. Combine flour, 1/4 cup sugar, soda and salt. Cut in butter until mixture resembles coarse crumbs. Combine milk and sour cream and stir into crumb mixture just until moistened. Do not overhandle. Spread batter into a 9" cake pan which has been sprayed with baking spray. Batter will be thick so you will need to level it in the pan. Sprinkle with remaining sugar. Bake at 375 deg about 15 to 20 minutes or until nicely browned. Cool about 10 minutes. Turn out and slice into 6 wedges. Split each wedge in half horizontally. Spread berries on bottom half and place top half on them. Garnish generously with whipped cream.
