Diane’s Tamale Casserole Friday, July 4, 2008


1 lb ground beef
1 cup onion, chopped
1 can diced tomatoes
1 15 oz can whole kerned corn
1/2 cup plain corn meal
1 tsp salt
2 TBSP chili powder
1 cup cheddar cheese, shredded


Brown meat and onion. Drain thoroughly. Add tomatoes, corn liquid and corn meal. Stir to blend and cook on low heat until very thick (about 10 minutes). Add corn, salt, and chili powder. Turn into a 9" square pan and bake in a preheated 350 deg oven about 25 minutes. Spread cheese evenly over the top and bake about an additional 15 minutes or until cheese is lightly browned

Please note that this works nicely with fresh vegetables. Use 2 1/2 cups of peeled, seeded and chopped tomatoes or use cubed fresh zuccini for the corn. Or try what you like best.
