Terry’s Potato Chip Chicken Friday, September 26, 2008
2 lbs boneless, skinless thigh fillets or drumsticks or drumettes or strips cut from breasts
1 cup milk
1 cup approx Terry’s potato chips, crushed (Use your favorite flavor. I like ketchup flavored if you can find them, but cheese works nicely.)
Cooking oil spray
Spray a flat baking pan with sides with cooking oil spray. Beat together the milk and egg. Dip each piece of chicken into this egg wash and roll it in the potato chip crumbs to coat thoroughly. Place in the pan, not touching. Bake at 400 deg about 25 minutes or until nicely browned and the juices run clear if you pierce the thickest part of the chicken.
This also works well if you place the chicken pieces on a rack set over a baking pan with sides. That way the chicken is crisp on all sides. Otherwise, it will be crisp on 3 sides and soft on the bottom.
Aunt Nell’s Dip
1 8 oz pkg cream cheese, softened
8 or 10 stuffed olives, chopped
1 small onion, grated
1/4 cup sweet relish, drained
Mix cream cheese with the olives, onion and pickle relish. Stir in equal amounts of mayonnaise and milk to make the mixture the consistency you desire for dipping.
You can’t go wrong with this dip and ANY flavor of Terry’s Potato Chips.
