Ingredients

A Dollywood recipe

1 pkg Gumbo mix
1 lb chicken tenders, chopped
1 lb catfish, chopped
1 large onion, diced
1 cup celery, diced
1 green pepper, diced
1 red bell pepper, diced
3 or 4 potatoes, cooked, peeled and diced
1 10 oz pkg frozen okra (or 1 lb fresh, sliced)

Directions

Mix gumbo mix according to pkg directions, mixing until completely smooth. In a heavy skillet, saute the onions and celery in a small amount of oil until they turn clear. Add peppers and cook about 1 minute. Stir in okra. Add this mixture to the Gumbo mix. Add chicken, catfish and potatoes. Bring to a simmer and allow to cook about 15 minutes before serving.
