A Dollywood Recipe
2 lbs smoked sausage (your choice, Italian, Polish, brats, etc)
1 large onion, halved and sliced thin
1 bell pepper, seeded and sliced into strips
1 clove garlic, crushed
salt and pepper to taste
In a heavy skillet, cook the sausage according to pkg directions. Remove from skillet and add onions and peppers. Cook, stirring occasionally until soft. Stir in garlic and cook about an additional 2 minutes. Season to taste. Place a sausage on a sub roll and top with the onion/bell pepper mixture. You may add mustard if you desire.
Note: This dish can also be prepared on the grill. Cook the sausages over medium heat until done through. Meanwhile, cook the onion-bell pepper mixture as described above to serve.
