Slow Cooker Southwestern Chili Wednesday, December 3, 2008


1 pkg Signature Family Recipes Southwestern Chili Mix
4 cups water
1 can diced tomatoes with green chilies
2 lbs very lean beef, cut into small cubes
1 15 oz can black beans, drained
1 15 oz can whole kernel corn, drained
1/2 cup sliced, pickled jalapeno peppers, drained


In the slow cooker, prepare the mix as directed. Using the water, tomatoes and beef. Cover and cook 8 to 10 hours as directed. About 20 minutes before you plan to serve the chili, add the black beans, corn and peppers. Turn the slow cooker to high and allow to come back to a boil. Serve with sour cream and shredded cheese.
