Butterscotch Oatmeal Cookies Wednesday, December 10, 2008

Ingredients

1 1/2 cup all purpose flour
1/2 tsp salt
1/2 tsp baking soda
1/2 cup butterscotch chips
1 stick butter, softened
1/2 cup brown sugar, packed
1/4 cup sugar
1 egg
1 tsp vanilla
3/4 cup uncooked old fashioned oats
1 cup chopped pecans
pecan halves (optional)

Directions

Preheat oven to 350 deg. Lightly spray cookie sheets with cooking oil spray. Combine flour, salt and baking soda. Place chips in a small microwave safe bowl and heat on high 1 minute. Stir. Microwave additional time in 15 second intervals until chips are melted and smooth. Beat butter and sugars in mixer until light and fluffy. Add egg, melted butterscotch chips and vanilla. Beat to blend well. Stir in oats and pecans. Using 1 level TBSP dough for each, shape dough into balls. Place on prepared pans about 2 inches apart. Flatten slightly (or press one pecan half into the center of each ball). Bake about 10 to 12 minutes or until edges are just lightly brown. Cool at least one minute on cookie sheet before removing to a rack to cool completely.
