Our friend at Shannondale, Marian Crowe, got this recipe from her brother-in-law Paul Howard in Dayton, Ohio
1 lb sausage, any flavor
8 to 12 eggs
2 cups biscuit mix
1 1/2 cups water
Fry the sausage and crumble. Dip sausage out into a 9x13 dish which has been sprayed with cooking oil spray. Scramble eggs in sausage grease. If you use onions, cook them in with the sausage. Place eggs over sausage. Mix biscuit mix with water. It should have a medium consistency. Pour over eggs and sausage. Bake at 350 deg about 30 to 45 minutes or until firm. If you are using cheese, sprinkle on top in the last 10 minutes of cooking. To serve, cut into squares and serve with syrup or jam.
