Low Fat Oven Baked Chicken Thursday, January 8, 2009

Ingredients

6 skinless & boneless chicken breasts
12 saltine crackers
1/2 cup flour
2 egg substitute (like great Egg-spectations)
cooking oil spray
Salt & pepper to taste

Directions

Using a rolling pin, crush the crackers in a plastic bag. Place the flour on a small plate. Pour the egg substitute on another small plate. Spread the cracker crumbs on a third plate. Spray a large non-stick frying pan with the cooking oil spray. Heat over medium heat. Coat the chicken breasts with flour. Next dip them in egg substitute. Next roll them in the cracker crumbs to coat well. Place them in the frying pan and cook on both sides until starting to brown. Remove from frying pan and place on a cookie sheet that has been sprayed with cooking oil spray. Bake about 15 to 20 minutes or until crisp in a 350 deg oven.
