Marmalade Cookies Thursday, October 19, 2006


1/3 cup butter
1/2 cup sugar
3 TBSP orange marmalade
1 egg
Finely grated peel from 1/2 orange, about 1 teaspoon
1 cup sifted flour
1/2 teaspoon salt
1/2 teaspoon baking powder


Cream butter and sugar; add marmalade, egg and grated orange peel; beat until light. Sift together dry ingredients; add to creamed mixture, blending well. Drop by teaspoonfuls onto greased baking sheets. Bake at 400 deg for about 8 minutes or until lightly browned. Allow to cool a couple of minutes on baking sheet before removing to wire rack to cool completely. Makes about 2 dozen marmalade cookies
