Roasted Root Vegetables Tuesday, December 19, 2006

Ingredients

2 or 3 carrots, peeled and cut into chunks
2 or 3 turnips, peeled and cut into chunks
2 or 3 parsnips, peeled and cut into chunks
2 or 3 potatoes, peeled and cut into chunks
1 large sweet potato, peeled and cut into chunks
2 or 3 onions, peeled and cut into chunks
salt and black pepper to taste

Directions

Spray a large, flat pan with cooking oil spray and arrange the vegetables on it in a single layer. Spray the vegetables with cooking oil spray. Sprinkle over them salt and fresh ground black pepper to taste. Cook in a 400 deg oven about 25 to 30 minutes or until the vegetables are browned and the potatoes are tender. Serve at once.
