1 pizza crust from the dairy case
1 lb country sausage (I use the good sausage made in the store at Food City Knox Plaza)
2 cups cheddar cheese, grated
6 eggs, beaten
Spread the pizza dough in a 9x13 dish which has been lightly greased with cooking oil spray. Cover the bottom and about 1 inch up the sides of the dish. Cook the sausage breaking it up until all color is gone. Drain any grease. Sprinkle sausage in crust. Sprinkle cheese evenly over sausage. Pour beaten eggs over all. Place in a preheated 425 deg oven and bake about 20 to 25 minutes or until filling is puffed and cheese is browned. Remove from oven and allow to cool about 5 minutes before serving.
This is also great as a brunch dish or for a light supper.
