Roasted Garlic Mashed Potatoes Tuesday, February 27, 2007
2 lbs potatoes, peeled and cut up (I especially like Yukon Gold Potatoes)
1 head garlic
1 tablespoon olive oil
1/4 cup sour cream
4 TBSP butter
milk or cream, if needed
Separate head of garlic into individual cloves. Cut just the tip off of each clove. Toss in olive oil and wrap tightly in small piece of aluminum foil. Bake in 350 deg oven for 45 minutes. Allow to cool. Squeeze the garlic out of the 'paper' shell of the individual cloves into a small bowl. Mash the roasted garlic with a fork. Boil potatoes in salted water until tender. Add the roasted garlic, sour cream, butter and salt and pepper to potatoes and mash by your usual method. Add more milk or cream to achieve desired consistency. If you wish, you may add the potatoes to a mixer bowl and whip. I prefer them just mashed.
