1 cup self rising corn meal mix
1 cup milk
1 each 15 oz can cream corn and drained whole kernel corn
1 10 oz can tomatoes with green chilies
2 cups cheddar cheese, shredded
Beat eggs and mix in corn meal. Then beat in the milk. Add all remaining ingredients and turn into a 9x13" dish which has been sprayed with cooking oil spray. Bake in a 350 deg oven about 45 minutes or until puffed and brown. Serve hot, warm, or cold.
I include this because I absolutely love the creamy corn and snappy tomato tastes of it with sliced Easter ham. And I think that is reason enough
