Smoked Salmon Gnocchi Tuesday, May 15, 2007

2 lbs smoked salmon (We hot smoke our own)
1 bag gnocchi (Potato Dumplings- found in the frozen food section)
2 oz smoked Swiss cheese (shredded)
Fresh chives- for garnish, chopped
1 clove garlic
1 small shallot
2 TBSP oil
1 pint heavy cream
1 1/2 oz white wine


Cook Gnocchi according to package (approx.3-5 minutes in salted boiling water)- rinse & set aside. Saute Chopped garlic & shallot in 2 TBSP of oil. Deglaze with wine & add cream. When it begins to reduce and thicken, add cheese. When incorporated, add shredded salmon & gnocchi to heat through. Place on plate, and garnish with chives.
