Coca Cola Pot Roast Tuesday, June 12, 2007

Ingredients

1 14.5 ounce can diced tomatoes, undrained
1 cup Coca Cola
1 packet dry spaghetti sauce mix
1 cup chopped onion
3/4 cup chopped celery
1 1/2 tsp salt
1/2 tsp garlic salt
3 lbs lean beef chuck roast
2 TBSP vegetable oil

Directions

In a large bowl, mix the tomatoes, cola, spaghetti sauce mix, onion, celery, salt, and garlic salt. Stir until spaghetti sauce mix is dissolved. In a Dutch oven, over high heat, brown meat in oil on each side. Drain off all fat. Pour tomato mixture over meat. Cover, and reduce heat to low. Simmer slowly for about 2 ½ hours, or until meat is tender. If you want vegetables with your pot roast, lift it out of the great broth at about 2 hours and add potatoes, cubed; onions, coarsely chopped; carrots, sliced in circles; celery, chopped into 2 inch pieces or other vegetables of your choice. Salt vegetables lightly. Place meat back on top of vegetables. Bring back to a boil. Reduce heat to a simmer and cook about ½ hour or until vegetables are tender. This goes real well with a piece of cornbread.
