Chicken and Curried Rice Tuesday, August 7, 2007
This is adapted from a great recipe in a fine little book called A Man, A Can, A Plan.
10 oz can cooked chicken, drained and flaked
6 oz box curry rice pilaf mix
1 14 oz can diced tomatoes, drained
1 8 oz can peas, drained
1/2 cup salted cashews (optional)
Prepare the rice according to pkg directions. After the rice has simmered about 15 minutes, stir in chicken, tomatoes, and peas. Simmer for 10 or 15 minutes more. Rice should be tender and liquids absorbed. Place in a serving bowl and sprinkle cashews on top. This one is good enough for company.
