Southwestern Dip for Tailgating Thursday, September 6, 2007


1 15 oz can black beans, drained, rinsed and drained
1 11 oz can whole kernel corn, drained
1 or 2 tomatoes, seeded removed and coarsely chopped
1 bell pepper, seeded and chopped
1/2 cup green onion, sliced
1/2 cup seeded and chopped pepperoncini peppers (you can buy already seeded and sliced)
1/4 cup fresh cilantro, chopped
1 cup sour cream


Mix all vegetables and place in a tightly covered container. Chill. When you are ready to serve, drain, stir in sour cream completely and serve with tortilla chips.
