Black Beans and Rice Thursday, August 14, 2012
Ingredients
1 tsp olive or vegetable oil
½ onion, chopped
1 clove garlic, minced
4 TBSP uncooked white rice
½ cup water or broth – vegetable or chicken
1/4 tsp ground cumin
1/8 tsp chili powder
1 can black beans, drained and rinsed
1 tsp each salt and pepper
Directions
1. In a saucepan over medium heat, sauté the garlic and onion in the oil for about five minutes.
2. Add, rice cumin and chili powder and sauté for another 3-4 minutes, or until rice starts to turn golden.
3. Stir in water or broth and black beans. Stir well to combine, over and simmer over medium low heat for 15 minutes, or until rice is tender and has absorbed the liquid. Season to taste with salt and pepper.
